Chemical process ought to be ECN-2 for color negative (at least if it's less than about 35 years old) and E-6 for the Ektachrome -- but it's probably single. Most modern cameras use single, and single-perf cameras can use double without mechanical issues (but the perfs will get into the image area).

My interest would have been for submini still cameras (Minolta 16 family and Kiev 30 or 303), which don't depend on perfs -- but the larger frame models prefer single perf for the same reason.

How do these negative films do in B&W chemistry then printing?

The ECN-2 color films will be much like C-41 films -- that is, they'll have an orange mask and possibly a dark filter layer (which would be removed by bleach in the color process), so will be annoying to print (as if heavily fogged). And you'd still have to remove the remjet antihalation coating.
